  2. Cake batter: Mix sugar, Butter, and eggs. Stir in carrots. Add the flour, baking soda and cinnamon. Mix just until combined. The batter will be thick.
  3. Streusel: Mix the ingredients until they look like pebbles. (Sometimes, I mix everything with my hands).
  4. Bake: Spread the batter into a 9-inch round pan greased with cooking spray (see FAQs). Sprinkle with streusel. Bake for 30 minutes or until the middle is firm. If you want to be extra (you are), top with honey butter.
