How to Make Carrot Cake Coffee Cake

This is how to make it.

  1. Grate the carrots using a food processor. Grating carrots is a chore. I’m not sorry. Please put me on record. I said it. I won’t make you grate any food! You can run peeled carrots in the food processor. If you don’t own a food processor, then what are you doing? This post is essential.
  2. Prepare your batter. In a large bowl, combine eggs, sugar, flour, cinnamon and Butter. BUTTER. Vegetable oil is traditionally used in carrot cakes. BUT BUTTER IS DELICIOUS. Today, we are using Butter. Obviously.
  3. Prepare your streusel. Place all the streusel ingredients in a small mixing bowl and pulse until they have a pebble texture.

Carrot cake Coffee Cake:

  •  2 Larger Carrots
  •  3/4 Granulated sugar
  •  1/2 Butter, melted
  •  Two eggs
  •  One teaspoon of baking soda
  •  One teaspoon Cinnamon
  •  Pinch of thumb Salt

Streusel Topping:

  •  4 Tablespoons Butter, melted
  •  1/2
  •  1/2 Brown sugar
  •  One teaspoon Cinnamon
  •  Pinch of thumb Salt

Instructions

  1. Prep Heat the oven to 350 degrees. Peel and grate carrots. (I use a food processor). You should get about 1 1/2 cups.
  2. Cake batter: Mix sugar, Butter, and eggs. Stir in carrots. Add the flour, baking soda and cinnamon. Mix just until combined. The batter will be thick.
  3. Streusel: Mix the ingredients until they look like pebbles. (Sometimes, I mix everything with my hands).
  4. Bake: Spread the batter into a 9-inch round pan greased with cooking spray (see FAQs). Sprinkle with streusel. Bake for 30 minutes or until the middle is firm. If you want to be extra (you are), top with honey butter.
