BAKED RAVIOLI

Make this comforting, cheesy ravioli in just 30 minutes!

After all the salads that I have been posting, comfort food was next on my list. It’s about balance, after all. This creamy, comforting, cheese-filled ravioli is the perfect solution. If you’re worried that you’ll have to break your diet, remember that you can always restart your diet next week.

This recipe can be completely customized to suit your tastes, from artichoke ravioli to lobster ravioli. The sky’s the limit! This was my favorite meatless dish, using Trader Joe’s ravioli with four cheeses. With some leftover marinara and cream cheese to give it that creamy, melt-in-your-mouth texture, you’ll have this delicious dish on the table in no time!

Ingredients

  • One 16-ounce package of cheese-filled ravioli
  • 2 cups of marinara, store-bought or homemade
  • 1/3 cup cream cheese, cubed
  • Half a teaspoon of dried thyme
  • Half a teaspoon of dried parsley
  • 1/2 cup shredded mozzarella cheese
  • Parmesan cheese, 1/4 cup
  • 1/4 cup basil leaves, chopped

Instructions

  • Preheat oven to 350 degrees F. Lightly grease an 8×8 baking pan or spray with nonstick spray.
  • Cook ravioli in a large pot with boiling water for about 2-3 minutes. Drain well.
  • Mix marinara sauce with cream cheese in a small saucepan on medium heat. Stir constantly until the cream cheese melts, approximately 2-3 minutes. Stir in the thyme, parsley, and chives.
  • Spread the ravioli in the baking dish. Sprinkle mozzarella on top and add the marinara sauce. Bake in the oven for 20 minutes or until the cheese is melted.
  • Garnish with Parmesan cheese and basil if you wish.
