This sandwich is not only healthy but also delicious! PROMISE!

It’s one of my favorites (and the easiest – duh!) When I am in a hurry, this is one of my favorite (and easiest – duh!)

You can make a delicious and healthy snack with leftover rotisserie poultry, Greek yogurt, grapes, and apples.

You can trust me. Tomorrow, you’ll thank me. You’ll thank me tomorrow. The next day. You’ll be doing this for the rest of your life.


  • 2 cups leftover rotisserie chicken
  • Red onion, 1/2 cup diced
  • Half a cup of chopped apples
  • Half a cup of grapes
  • 1/4 cup dried cranberries
  • 1/4 cup slivered Almonds
  • 1/2 cup plain Greek yogurt
  • Lemon juice freshly squeezed, one tablespoon or more to taste
  • Half a teaspoon of garlic powder
  • Black pepper and Kosher Salt
  • Eight slices of bread
  • 4 leaves Boston Bibb lettuce


  • Combine the chicken, red onions, apples, grapes, and dried cranberries in a large bowl. Add Greek yogurt, garlic powder, lemon juice, and salt to taste.
  • Sandwiches with lettuce and chicken mixture can be served on bread.
