7-Layer Beet salad

This 7-layer Beet salad is stunning! This beet salad is studded with cooked beets and oranges, pistachios chopped, truffle ricotta cream, and fresh mint. So new and so delicious!

It is fresh and delicious in the perfect way for January. You want to feel revitalized by eating vegetables and really enjoying them, but also you need something substantial and satisfying. Can we have it all at once?

This salad can be served individually on a plate and slid through with a soft focaccia. I do this a lot for quick lunches. You can serve this salad family-style as a side dish to whatever you are having for dinner.

I don’t mind a midnight snack.

Ingredients

  • 2-3 cups chopped kale

  •  2 – 3 Oranges, cut into rounds

  •  2 Tablespoons Fresh mint OR any other chopped herbs that you prefer (basil, chives, or thyme are good).

Instructions

  1. Massage the kale lightly with some of the dressing. It will taste better.
  2. Cut the shallots, beets, and oranges.
  3. Spread a small amount of the creamy element on your serving plate. I would use approximately three tablespoons if this were a salad to serve one person. If you’re making a salad to serve 4-6 people, I’d use about 1/2 cup.
  4. Then, layer the remaining ingredients: kale massaged, oranges and shallots. Pistachios are also a good addition. If you like, add olive oil, pepper, and salt to the salad. This salad is great with a good piece of focaccia.
